Is there a good HOW-TO that explains the ins and outs of actually packaging a standalone theme and/or style?

I don't think there are any HOW-TO's on the topic but I know it is easier to package a style (for something like K2) than a whole theme. For a K2 style, all you need is your custom stylesheet and any custom images you use. I am not sure how you would package a whole theme but there might be something in the Wordpress documentation.

My suggestion is this: Package the directory in which the theme resides. That way, when people unzip to desktop, they don't get a wad of files all over the place.
And that's it :)

Best to also leave a readme file with contact information, etc. incase they have issues or comments on it. Also explain the licencing, if you care about that sort of thing.

I would love to read that.
I've looked at this (http://codex.wordpress.org/Adding_Administration_Menus) but was lost within minutes.
